Chorizo
Ingredients
1 ¼ pounds ground pork
5 whole cloves
2 bay leaves
½ t oregano
½ t thyme
8 whole peppercorns
1 t taco seasoning
1 t garlic salt
1 t ground cumin
½ t ground coriander
2 T paprika
1 t cayenne pepper
1 t salt
3 T apple cider vinegar
1 T chili powder
Directions

Add cloves, bay leaves, oregano, thyme and whole peppercorns to a spice grinder and pulse multiple times to a fine powder.

Add remaining spices (taco seasoning, garlic salt, cumin, coriander, paprika, cayenne pepper, and salt) and pulse multiple times to combine well.

Evenly sprinkle spices over pork.

Add apple cider vinegar to pork.

Using your hands, work the spices and vinegar evenly into the pork.

Let sit overnight in the refrigerator before using (can freeze in vacuum seal bags right away).
