Crepes

Ingredients

  • 3 eggs
  • 1/2 cup milk
  • 1/2 cup cream
  • 3 T melted butter
  • 2 t vanilla
  • 3/4 c all-purpose flour
  • 1 t baking powder
  • 2 packets sweetener (Equal)
  • 1/2 t salt
  • Directions

    1. Combine all ingredients in a blender or food processor.
    2. Place in refrigerator for 1 hour or more.
    3. Brush a skillet with mild oil and heat on medium heat.
    4. Add about 3 T of batter and swirl to make a round crepe.
    5. Cook until golden brown on the bottom, then flip.
    6. Cook until golden brown.
    7. Remove from heat and serve.

    Notes

  • Can be stored in the refrigerator between sheets of wax paper for several days or frozen for up to a month.
