Ingredients
3 eggs
1/2 cup milk
1/2 cup cream
3 T melted butter
2 t vanilla
3/4 c all-purpose flour
1 t baking powder
2 packets sweetener (Equal)
1/2 t salt
Directions

Combine all ingredients in a blender or food processor.

Place in refrigerator for 1 hour or more.

Brush a skillet with mild oil and heat on medium heat.

Add about 3 T of batter and swirl to make a round crepe.

Cook until golden brown on the bottom, then flip.

Cook until golden brown.

Remove from heat and serve.
Notes
Can be stored in the refrigerator between sheets of wax paper for several days or frozen for up to a month.
