Strudels

Ingredients

  • 2 c all-purpose flour
  • 1 egg
  • Warm water to make a firm dough
  • ¾ t salt
  • ¼ t yeast
  • Butter (4-6 T)
  • 2 large potatoes (diced)
  • Directions

    1. Combine all ingredients to make a firm dough.
    2. Let rise for at least 30 minutes in a warm location.
    3. Roll out dough in a thin sheet.
    4. Spread dough with butter.
    5. Place dough over your hands and stretch until very thin.
    6. Optional) Place additional ingredients of your choosing on dough (sauerkraut, ham, fried onions).
    7. Fold dough over 4 times and cut in 4” pieces.
    8. Place potatoes and 2 T butter in a sauce pan.
    9. Fry the potatoes until lightly browned.
    10. Add water just to cover potatoes and bring to a boil.
    11. Place strudels on top of the potatoes and cover.
    12. Simmer for 20 minutes (DO NOT UNCOVER).
